Champ - Irish Mashed Potatoes

6-8 servings
Ingredients:

2 large baking potatoes

4 Tbs. butter
-
6 scallions (green onions)

1 cup milk
-
1 tsp salt , pepper to taste

1/2 tsp dry mustard

Process:

Wash and quarter 2 large baking potatoes.
Leave skin on.

Boil in medium pot with 3 cups of water for 20 minutes
or until a knife easily passes through potatoes.
Drain.
Put in large bowl.

While potatoes are cooking:

Melt 1 Tbs. butter in a shallow saucepan.
Add 6 chopped scallions and stir.
Heat 1 minute but do not brown.

Add 1 cup milk.
Simmer for 10-15 minutes

Mix and Mash:
Add hot milk and scallions to potatoes
Mash together with potatoe masher.
Add salt, pepper and dry mustard.

Plate:
Goes well with hot with roast lamb or sausages.
Grate cheddar cheese over the top and serve.

Champ - Irish Mashed Potatoes
A very simple, hearty recipe. Having gone through the terrible famine and potatoe blight of the nineteenth century, in Ireland, mashed potatoes were much more than a side dish. They were a hearty meal unto themselves.
TIPS:
-
Mashing by hand creates a much better texture and the green onions remain visible.
If using a food-processor, be very careful not to blend or over-mash as the texture will become heavy like wall-paper paste and the onion taste will take over.
