Almond Butter Cookies

375° 8-10 min.
Yield:
36 cookies
Ingredients:

2 c flour
-
1/2 c sugar
-
1 tsp vanilla
-
1/2 c freshly ground almonds
-
2 sticks unsalted butter
-
1 egg
-
1 egg yolk
-
1 Tbs cool water

Process:

Mix together butter and sugar.
-
Add flour, egg, vanilla and ground almonds. Mix.

Knead dough lightly.
-
Roll out dough 1/8" thick.
Cut into cookies with fun-shaped cookie cutters.
Circles, stars and bells are good shapes.

Place on greased cookie sheet.
Bake at 375° for 8-10 min.

Mix egg yolk and water together well with a fork for golden glaze.

Immediately on coming out of oven, brush egg yok mixture onto hot cookies on baking sheet and sprinkle lightly with decorative colored beads or colored sugar.

Remove decorated cookies from cookie sheet and let cool.

Christmas Cookies
Delicious almond flour dough, covered with sugar and filled with jam.
TIPS:
-
Yellow egg glaze needs to be applied to warm cookies.

Do not put frosting on these cookies as their wonderful almondy flavor will be overwhelmed.

Apply decorative beads and sugar sparingly, a pinch in the middle area of the cookie, is plenty.
-
Let cookies cool before placing in cookie tin.
Separate cookie layers with wax paper in cookie tin.
Place a fresh apple wedge in the tin. This will soften the cookies and give them a unique flavor that you can't get any other way.
